Oven Roasted Potato Wedges with Maple Pepper Seasoning
4 medium baking potatoes
2 sweet potatoes
Maple pepper flavored with garlic
Butter flavored cooking spray
Preheat oven to 375 degrees. Scrub potatoes and pat dry. Cut each potato lengthwise into 8 wedges. Spray a baking sheet with cooking spray and arrange wedges cut side up. Spray potatoes with cooking spray and sprinkle with maple pepper. Bake in preheated oven for 45-55 minutes.
Grilled Tarragon-Dijon Chicken
1/4 cup olive oil
1/4 cup maple-horseradish mustard
3 tbsp lemon juice
3 tbsp lime juice
2 cloves minced garlic
1 tsp dried tarragon
1/2 tsp pepper
Boneless, skinless chicken breasts
Combine first 7 ingredients in a large ziploc bag. Add chicken, salt and chill at least 30 minutes, turning occasionally. Grill 8 to 10 minutes over hot coals or until done.
Raspberry Chocolate Bars
1/2 cup butter
1/2 cup sugar
1/2 tsp vanilla
1 cup flour
Pinch of salt
1/4 tsp baking powder
3/4 cup seedless raspberry jam
1/2 cup chocolate chips
1 cup flour
1/2 cup sugar
1/3 cup softened butter
1 cup chopped nuts
1/4 tsp vanilla
Blend 1/2 cup butter, sugar, 1/2 tsp vanilla, 1 cup flour, salt and baking powder until crumbly. Press into a greased 7x11 inch pan. Bake at 350 degrees for 15 minutes. Remove from oven and spread with raspberry jam. Sprinkle with chocolate chips. Crumb Topping: Mix 1 cup flour, 1/2 cup sugar, soft butter, nuts and vanilla. Pour over chocolate chips. Return to oven for 15-20 more minutes. Cool and cut.
Jam Squares
1-1/2 cups flour
1-1/2 cups quick oatmeal
1 cup jam (any flavor)
1 cup brown sugar
3/4 cup butter or margarine
Mix flour, brown sugar and oats. Cut in butter until crumbly. Press 2/3 of the mixture into the bottom of an 8 or 9 inch square pan. Build up sides to 1/2 inch. Spread jam over crumb layer. Top jam with remaining crumbs; gently press. Bake at 350 degrees for 35 minutes. Cool and cut into bars.
Savory Onion Mashed Potatoes
3lbs potatoes, peeled and cubed
4 tbsp butter, or to taste
1/2 cup milk
2-3 tbsp Halladay's Farmhouse Five Onion Seasoning
1/4 cup sour cream
Boil potatoes until tender. Meanwhile, heat butter, milk and seasoning in a saucepan (or microwave.) Drain potatoes; return to pan. Add butter mixture, while mashing until light and fluffy.
Creamy Shrimp Salad on Cucumber Rounds
3/4 lb cooked and peeled shrimp, roughly chopped
2 ribs celery, finely chopped
2 tbsp light mayo
1 tbsp non-fat Greek yogurt
1-2 tsps Halladay's Spicy Garlic Dill Seasoning
1 large cucumber, cut into 30 thin slices
Combine all ingredients except cucumber; salt and pepper to taste. Arrange cucumber slices on a platter. Top each slice with a tablespoon of shrimp salad and dust lightly with seasoning for garnish.
